Baked Rice

1 cup of uncooked white rice
one 5 ounce can of water chestnuts, drained and sliced
2 cups of boiling water
1 package (1 3/8) ounces of dry onion soup mix
2 tablespoons of chopped pimento

Place rice in bottom of a 1 1/2 quart baking dish. Toast at 350F. for 10 minutes, stirring occasionally until lightly browned.
Stir in remaining  ingredients.
Bake, uncovered at 350F. for 45 minutes or until rice is tender. 6 servings
